House Guests!

So here are a few more pictures from this weekend! We loved our visitors! I absolutely love having house guests. I love having to clean my house (I am being serious!) because it gives you and good reason for it to be really clean. Also, I love cooking and sitting down with people and taking our time to eat a meal and chat! I cannot wait until Rachel, Brittney, and Presley come and visit in the beginning of March!
On our way to the airport to pick up Mrs. Jen I asked Adam if he could name some meals he really liked so I could cook them for our guests. (I had waited till Mrs. Jen was going to be here to go to the store so she could watch the girls :) ) So, Adam came up with Poppy Seed Chicken, Spaghetti Bake, Roast, Parmesan Chicken, and Breakfast! I was sooo glad to have his help with what to cook; I forget what I cook and what he really likes etc. Do ya'll have that problem too? Do write down what you cook each day?

I am going to include the Chicken Parmesan recipe for Jessica here.

Chicken Parmesan

* 4-6 chicken breasts
* 1/3 cup Italian bread crumbs
* ¼ cup olive oil
* Parmesan cheese (any kind works)
* 1 cup Mozzarella cheese
* 1 jar spaghetti sauce

Mix break crumbs, olive oil and moz. cheese, pour spaghetti sauce on bottom of dish – place chicken breast and then spread mixture on top – then sprinkle parmesan over … bake at 350 degrees for 1 hour and 15 min. or until juices run clear.

My modifications: I butterfly chicken breasts to get them as thin as I can. I only bake for 45 min to an hour and since I butterfly breasts I sometimes have to use 2 pans and more toppings.

This recipe is so easy and so good!

All and all we had a wonderful time even with all the snow! Thanks Marmie and PapaDaddy for coming to visit us!

I have this same recipe for chicken parm and it gets RAVE reviews every time I make it!! So easy and sooo good!
