Yummy GF DONUT Recipe

The Accidental Allergy-Friendly Donut Recipe (That Even a Picky Kid Loves!)


Yesterday was a rough one in our house. Poor Abe had a terrible allergic reaction to something (I have my suspicions, but let’s not jinx it). He’s still recovering, with a rash on his face as a lingering reminder. My heart just broke for him because I know how this feels. 


Fast forward to today: Every Sunday morning, my kids look forward to donuts at church. It’s their little tradition, and I didn’t want Abe to feel left out—especially after everything he went through. But there was no way I was risking another reaction, especially not in public. So, we had a mission: Create a donut that was allergy-friendly, delicious, and (hopefully) Abe-approved.


We found a recipe online, but if you know me, you know I can’t just follow a recipe as-is. We adapted, adjusted, and made it our own. And you know what? Abe loves them. If you’ve ever met Abe, you know that’s saying something. My kids are tough food critics. 


I haven’t tried them yet (because, honestly, I’m just not in a donut mood right now), but according to Abe, they’re a winner. They might not be the prettiest batch ever, but hey, we can work on that. The most important thing is that we now have a donut option that works for him—no scary reactions, no missing out on Sunday traditions.

GLUTEN FREE DONUTS


Ingredients:

1 ¾ cups grain-free paleo baking flour (I use Bob’s Red Mill  

                    Grain Free Paleo Baking Powder) 

2 tsp baking powder

2 eggs

⅓ cup maple syrup

1–2 tsp vanilla

¼ cup coconut oil


Icing:

2 cups powdered sugar

2 tsp vanilla

4 tbsp milk (adjust as needed for consistency)


We kind of just eyeballed the icing until it looked right. No science, just vibes as Abe would say. 


The Verdict


Abe’s verdict: “These are delicious.”

And like I said, that’s a big deal.
